| Yup… We’re definitely getting a new (bigger) still. The news came earlier this week. Gotta admit, that’s a helluva way to kick off the new year.

Daniel has started having conversations with still makers - plowing through the details and specs so we have good options to choose from. Caught up with him briefly, and already learned something interesting.
Originally, we were aiming for the biggest still we could fit in the distillery. That put us somewhere between 200-250 gallons. But the still makers already offered a bit of insight for us to consider. In the time it would take to heat a still that size (with a Bain-Marie heating method), we could get 2 or 3 runs out of a 150 gallon still (using a different heating method.)
Any info beyond that is above my pay-grade, but it’s nice to have options. And it’ll be amazing to finally knock down a giant hurdle standing between us and a fat stream of deliciousness.
