"What's this?" "Remember that Boosh Rye that was finished in stock ale barrels that originally held apple brandy? That's it." I told you about this whiskey a couple of weeks ago in this newsletter. It's interesting, unique, and delicious. Dammit, it seems a shame there's not enough of this stuff to bottle and sell it. So John and I did the next best thing. We filled a 200ml flask, labelled it, and I hid it in the distillery.
I ran into John at the barrel house Thursday. John doesn't have an official title. Barrel house manager is close. Whatever you call the guy who can do just about anything and knows where the bodies are buried, that would be John.
I found him near a collection of partially filled bottles with notes and codes written on them in black marker. Every distillery has a tasting and experimenting room like this. It's kind of like going into an artist's studio and seeing brushes and tubes of paint piled around on tables.
I saw one marked, "Eccentric Boosh."

Along the way, her fascination for the maturation phase of the whiskey-making process led her to source the ideal Sherry casks for the liquid and create The Sexton, an Irish single malt clad in a hexagonal black bottle, disguising the sherry-tone liquid that lies within.
