Let’s get this out of the way. I have yet to taste the “whiskey” from the story I’m about to tell you. I’ve only witnessed the reactions and heard the reports of a lucky few. My time will come. Crowded Barrel has been aging several barrels of 15 year old light whiskey for various experiments and blends. After a Texas summer, the barrels added a saucy little cherry note to some simple vanilla.

Let’s get this out of the way. I have yet to taste the “whiskey” from the story I’m about to tell you. I’ve only witnessed the reactions and heard the reports of a lucky few.

My time will come.

Crowded Barrel has been aging several barrels of 15 year old light whiskey for various experiments and blends. After a Texas summer, the barrels added a saucy little cherry note to some simple vanilla.

Nice. But 3 of the barrels sucked - plain and simple.

Sometimes a barrel will age and mature past an awkward set of flavors. But these 3 barrels were hopelessly weird and unbalanced. So Daniel dumped the 15 year old whiskey back into a still, and took the spirit back down to the studs.

“If these barrels aren’t good enough, we might as well get some extra new make out of it.”

Turns out, after a spirit has aged for that much time, redistilling it doesn’t magically deliver a young new make whiskey again. That redistilled spirit pours out crystal clear - as expected. But all of the weirdness from the original barrels was removed with smart cuts, leaving a beautifully mature whiskey palette, in a perfectly clear pour.

An episode about all of this is in the works. Watching people trying it has been fun, but I’m getting in line for my own pour.
